FAQ
Why the name Origin Hill?
Because that’s where it all begins - at the origin, on the hill, where coffee is grown with care and shaped by altitude, soil, and sun. Our name is a small nod to the people and places that make great coffee possible.
Where do you source your coffee from?
We work with specialty coffee producers from around the world who care deeply about their craft, from award winning innovators to small hidden gems. You can read more about them here.
Is your coffee Fair Trade?
Our coffees are speciality-grade. Fair Trade certifications were created mainly for large-scale, commodity-grade coffee to guarantee minimum prices and standards. In specialty coffee, things work a little differently. High-quality microlots are bought through direct or relationship-based sourcing, where importers work closely with producers and pay prices well above Fair Trade minimums.
At Origin Hill, we work with respected specialty importers who maintain direct relationships with farmers and pay quality premiums for their work. This lets us buy unique lots while ensuring producers are compensated fairly and sustainably.
Where are you based?
We’re based in Stouffville, Ontario, Canada.
We roast at KW Coffee Collective in Kitchener, a co-roasting space we share with other passionate local roasters. It’s where we experiment, cup, and roast every batch that leaves our hands.
Where do you ship?
We ship across Canada. Orders over $50 qualify for free standard shipping.
If you’re local to Stouffville, Markham, or Uxbridge, we offer free local delivery on orders over $20.
How often do you roast?
Your coffee deserves to arrive at its best. We roast in small batches, adjusting our schedule based on demand to keep every bag as fresh as possible. Each bag includes its roast date for transparency and freshness.
Resting Coffee
Freshly roasted coffee needs a little time to breathe. We recommend resting your beans 5-10 days after the roast date, with lighter roasts tasting best toward the later end of that range. This allows COâ‚‚ to escape and the flavours to open up fully.
What roaster do you use?
We roast on a Mill City Roaster, a natural gas drum roaster with digital controls for gas, drum speed, and airflow. It gives us consistency and precision while keeping the process hands-on.
Do you sell ground coffee?
No, and here’s why. Grinding fresh right before brewing makes a huge difference in flavor and aroma. We want you to experience the coffee exactly as it was meant to taste - vibrant, full, and alive.
If you’re new to grinding at home, we’re happy to recommend an affordable grinder to get you started.
