Why this coffee stands out
At 1960 masl in Cauca, Diego Bermudez is reshaping Colombian coffee through science. Each cherry at Finca El Paraíso is carefully selected and disinfected with ozone before a 36-hour anaerobic fermentation, followed by a second stage with specific microorganisms that develop complex fruit notes.
After fermentation, the beans undergo thermal-shock washing, where alternating hot and cold water preserves flavor and prevents over-fermentation. The coffee is then dehumidifier-dried to lock in the coffee’s creamy body and long, fruity finish.
This 93-point micro-lot Castillo offers exceptional clarity and consistency, a benchmark for innovation in Colombian specialty coffee.
